Lentils and Chicken

4 cloves of garlic, crushed 

1 onion, diced 

2 celery stalks, diced 

1 carrot, diced 

Soften in a saucepan 

with olive oil, on medium heat. 

A pinch of salt and tumeric (optional) 

Add 1 tomato, diced 

4 cups of water. 

Bring to the boil. 

Throw in two chicken breasts 

Simmer for 15 minutes 

Take out the breasts and cool 

Add a cup of red lentils 

Cook for 20 minutes. 

Shred chicken and put it pack in the pot. 

Serve. 

I know this is a soup 

not a poem 

but it was also the most beautiful part of my day.
